How do you do something that's never been done before in a state where everything has already been done?

So, create a completely new Wisconsin cheese. No problem.

LaBelle cheese is great on a cracker, in a sandwich, in a salad, on a burger, topping a pizza, enhancing a sauce or a casserole, paired with cold meats or fresh fruit...say, is anybody hungry?

Wisconsin only makes the most famous cheddar in the world. And take a look at all those cheeseheads at Lambeau: they've got holes in them. Yup, great swiss cheese comes from Wisconsin. And gouda. And mozzarella, and parmesan, and blue cheese. And a raft of new artisanal cheeses of every stripe (when the stripe is porter, the result is really delicious). Finding a niche that hadn't already been filled was a tough challenge.

Except now that we have tasted the end result, and gotten the reaction from retailers and chefs and just plain folk, we think we've pulled it off.

So why did a family of dairy farmers decide to create a completely new Wisconsin cheese? In a word, survival. Like many farms, Koepke Farms is a family-run farm, and in today's economy family farms survive by finding any new revenue stream they can. Our new cheese, if it succeeds, means we gain a bit more revenue from every gallon of milk we produce. This allows us to tend to our cows, and our land, the way we think is right. And it allows our small, family farm to remain a small, family farm.
